The ingredients needed to make Amla Rice:
- Provide 3 cup of Cooked rice.
- Provide 8 of big Indian Gooseberry.
- You need to taste of Salt.
- Get Pinch of Turmeric Powder.
- Provide 3 of Green Chillies.
- Use Handful of Fresh Coriander chopped.
- You need 1/2 inch of Ginger chopped.
- You need Pinch of Roasted Fenugreek Powder.
- Provide 1 tbsp of Ghee.
- Provide 3 tbsp of Peanuts.
- Provide 1 tsp of chana dal.
- Get 1 tsp of urad dal.
- Provide 1 tsp of Mustard Seeds.
- Get 1/2 tsp of Cumin Seeds.
- Use 1/4 tsp of Asafoetida.
- You need 2 of Dried Red Chillies Whole.
- Use 10 of Curry Leaves.
- You need 4 tbsp of Cooking oil.
Steps to make Amla Rice:
- Wash amla and chop into small pieces,discard the seeds..
- In a mixer jar and add chopped green chilies, ginger, amla and fresh coriander and grind to make a paste..
- Add 1-2 tsp water if having difficulty in grinding..
- Heat oil in a wide pan and add peanuts and fry for few seconds til it start to crackle..
- Add urad daal, chana daal and stir for few seconds..
- Then add cumin, mustard seed,dried red chili, asafoetida and curry leaves and saute..
- When the cumin and the lentils become golden red in colour then add the amla paste in the pan and saute for 2 minutes on medium heat..
- Now add turmeric powder,the cooked rice, salt, roasted fenugreek powder and mix gently...
- Cook till the rice become hot and steaming.
- Add 1 tbsp of ghee before switching off the heat..
- Serve amla rice with boondi raita or buttermilk..
